Matcha Cupcakes with Cream Cheese Frosting

Matcha Cake

Fetch:

  • 5 eggs
  • 2 c flour
  • 1 1/2 c sugar
  • 1 c butter
  • 3 T green tea powder (matcha)*

Quantities make approx 12 medium cupcakes.

Soften butter in a bowl. Add sugar & mix well.

Incorporate eggs.

Sift flour & green tea powder together into mix & add extras if you so desire.

Fill cupcake papers, allowing room to rise.

Bake at 175 celsius for 30 minutes (do the toothpick test), spinning the tray at halftime so they rise & brown evenly.

*It’s worth paying for a good matcha powder (not sencha/leaves) from what I’ve been told. This was my 1st time. It costs a fair bit but it goes a long way & is the only expensive ingredient necessary.

Wait for the cakes to cool (yes, you have to wait) & then start on the..

Creme Cheese Frosting

  • 1 pack (250g) of softened philly creme cheese
  • 2-3 cups of powdered sugar
  • 2 T softened butter

Beat the creme cheese & butter together.

Add sugar slowly until it starts to thicken up/ to taste.

Pipe/smooth frosting onto cupcake & top with nice decoration.

*Could I fit anymore frosting on top? ;) ..Seriously, it was way too much frosting. It was too sweet & overpowering for a subtle cake like matcha.
