We had a roast on the weekend & of course that means leftovers!
I thought I’d try some roasted pumpkin inari. The flavours sounded like a good combo to me.
My, & my husband’s lunches for the day-
Blue box- Roast veges. Potato, pumpkin, onion, fake chicken & stuffing
Yellow box- Roast potato with dressing & an onigiri with fake-chicken* filling
Red box on the right- Inari with seasoned rice & a slice of pumpkin in the centre. Pickled ginger & wasabi
Red box at the top- Inari, onigiri, tofu jerky & daikon radish.
* you will see “fake chicken” in a lot of my food. It’s some sort of vegetarian meat-alternative which I get from the asian supermarket freezer section. It’s quite close to a KFC (from what I remember) or chicken karaage taste and texture.
