Choco-banana Bread

It’s cyclonic outside. Seriously. So what else is there to do but bake, right? :P

I don’t like bananas. I’m not sure what it is; it’s almost a phobia-like reaction I have to them. They’ve freaked me out all my life. They’re alien & even the bible can’t explain them. ;)
So you can imagine my delight when I open my fruit n’ veg co-op box to find.. a bunch of bananas. Yay.

So, what else can I do but make good of the situation with a bit of experimentation yeh? Why not try making bananabread? It was one of my bro’s favourites when we were young. He could eat a whole loaf of it at once. 20 years later, it’s about time I brave it up & check it out.

Yeh, so I’m not likely to just make a basic bananabread. It had better contain some chocolate or “something” in there to distract my brain from the banana & all. So here it is, Choco-banana Bread!

This one is credited to Stephanie Jaworski.. found on.. some site I can’t remember. The recipe is pretty much un-tweaked since I’m a bananabread virgin.

Grab this stuff-

  • 1/2 cup of nuts. Walnuts ftw.
  • 1 3/4 cups flour
  • 1/4 cup cocoa
  • 1 cup white sugar
  • 1 t baking powder
  • 1/4 t baking soda
  • 1/2 cup white chocolate (chopped or chips)
  • 2 large eggs/vegan replacement
  • 1/2 cup butter/marge. Add a pinch of salt if it is low-sodium stuff.
  • 3 big ripe bananas (about 1-1/2 cups)
  • 1 t vanilla
  • Sprinkle of brown sugar

Bake your nuts ;)

Once they’re toasty, let them cool and chop them coarsely.

Melt the butter & mash the bananas. Mix them together in a big bowl with the eggs & vanilla & then start mixing in the dry ingredients one by one.

Yeh, you really should sift stuff I guess. You didn’t see me just throw all that cocoa in. :P

Mix in the chocolate

Pour into a greased loaf pan & sprinkle the top with brown sugar.

Bake at 180c for about an hour (Check it at 50mins just in case. All ovens are different, just like us.).

Eat it steaming-hot or room temp.

So, you know what? I like choco-banana bread! It’s not too banana-y to freak me out but adds a nice moist sweetness to the loaf. I am a fan. :)
