Chocolate Zucchini Loaf

I was looking for a healthy-ish treat to make this weekend & found this recipe sitting in my recipes folder, never tried. It just so happens that I bought a bag of zucchini this morning too. After a read-through again it didn’t sound incredibly healthy after all with all the sugar & chocolate but at least it’s dark chocolate, plus there’s no butter or cream etc & only a small amount of oil.

It’s vegan without the chocolate chips, so maybe you could omit them, or swap it for vegan chocolate if you’re lucky enough to have some. It’s pretty rich so I can imagine it still being ok without the chocolate & only using cocoa.

Best eaten steaming hot in my opinion, this is possibly my favourite “dessert” already on my first try. I’m not sure if it’s a cake or a slice, loaf, brownie, whatever, to be honest. If anyone has proper definitions for each then I’m interested to know.. & I’ll probably have to rename everything in my recipe-files.

Here it is.

Fetch-

  • 1 C flour
  • 1t baking soda
  • 1/2 t baking powder
  • 1/3 C cocoa (1/2 C for vegan variation w/ no chocolate)
  • 1/2 C white sugar
  • 1/2 C brown sugar
  • 1/2 C oil (I used sunflower, but safflower is healthier if I remember correctly )
  • vegan equivalent of 2 eggs
  • 1 t vanilla
  • pinch of cinnamon/nutmeg
  • up to a cup of chopped dark chocolate
  • 1 1/2 C finely grated zucchini

Once you have everything ready, set your oven to 180C. This one’s quick to make, slow to cook.

In a big bowl mix your oil, egg mix, vanilla, & then start adding the sugars. Through a sieve add the cocoa, baking soda & powder, cinnamon/nutmeg, flour, mixing thoroughly.

Once smooth, add the grated zucchini & then the chocolate.

Pour into a small loaf/cake tin.

Bake for about three quarters of an hour, then test with a knife. Remember it is meant to be moist & fudgey.
